Beans Frijoles Maneados

2 cups of Pinto Beans El Mexicano, cooked

¼ cup of Onion, finely chopped

¼ cup of Extra Virgin Olive Oil El Mexicano

½ cup of Milk

2 tbsp.  Salt El Mexicano (to taste)

1 Serrano Chili, finely chopped

1 cup of Queso Manchego (cheese) o Queso Chihuahua El Mexicano (cheese), shredded

To Prepare:

Pre-Heat your oven to 350° (180C). With a spoon, put a portion of the cooked beans with some of the broth into your blender, add a few tablespoons of the milk and blend. Continue this process until all your beans and milk are combined. In a saucepan heat the extra virgin olive oil, then add the Serrano chili and the onion, stir until the onion and Serrano chili have cooked down. Add the beans to the saucepan and stir, combining the onion and Serrano with the beans for about 3-5 minutes. Put your beans in an oven safe pan; add the shredded cheese to the top and bake for about 5-10 minutes or until cheese is melted.
