Tender Cactus Salad (Ensalada de Nopalitos)

4 cups (32oz) NopalitosEl Mexicano, (tender cactus)

1 ½ cup Queso Fresco Casero El Mexicano, granulated (skim milk cheese)

2 Serrano Chili’s, finely chopped

¼ cup of Onion, finely chopped

1 cup of Cilantro, finely chopped

½ cup of Tomato, finely chopped

Salt El Mexicano, to taste

To Prepare:

Drain the Nopales or tender cactus, rinse with cold water, and drain again. Add the cilantro, onion and tomato, mix combining all the ingredients. Add salt to taste, mix. Top with granulated cheese and serve.
